recipe | fabulous tilapia tacos

fabulous tilapia tacos

serves 4

1/2 cup sour cream
3 tablespoons mayo
3 tablespoons milk
1/2 teaspoon ground cumin
3 tablespoons butter, melted
2 cloves of garlic finely chopped
8 little tilapia fillets
(you can also substitute with 1 1/2 lbs shrimp!)
4 limes quartered
1/2 teaspoon kosher salt
8 6-inch corn tortillas
3 cups shredded green cabbage
green tomatillo salsa

1. in a small bowl whisk together the sour cream, mayo, milk, and cumin. set aside.

2. in a separate bowl combine the butter and garlic.

3. place the fillets in a large skillet over medium heat and brush them with the butter/garlic mixture. sprinkle with salt to taste. fish should be cooked when it starts to separate. meanwhile place tortillas and lime quarters on a grill over low heat. grill them until they are warmed.

4. to serve, divide the fish fillets between the tortillas, and top each with cabbage, sour cream mixture, and green salsa. serve lime wedges on the side.

(if you substitute fillets for shrimp . . . soak skewers in water for about 10 minutes and then grill them with the tortillas and lime wedges, still brushing them with the butter garlic mixture)
